I have been seeing a recipe for oatmeal muffin with applesauce and that raised my interest so I had to try it for myself. I used a diabetic recipe so it is not too sweet, I have to say it turned out absolutely amazing! Here is the recipe:
3/4 cup oatmeal (dry quick) 1/2 cup applesauce 1/2 cup milk 2 tBs oil 3/4 cup flour 2 tsp cinnamon 1 tsp ginger 1/2 tsp salt 2 tsp baking powder 2 eggs 2 tsp vanilla 5 tsp brown sugar - combine oatmeal, applesauce, milk and oil - let it stand around for 20 minutes - in the 2nd bowl combine flour, cinnamon, ginger, salt ad baking powder - in the 3rd bowl slightly beat the eggs with vanilla, brown sugar - then add the egg mix to the oatmeal mixture, and then add the dry ingredient from the 2nd bowl to it. - stir just a bit, add some chocolate nibs then pour into muffin pan, I decorated it with cinnamon sugar - bake at 350 degrees for 15 to 20 minutes. I was craving banana bread so before I went to the trip I left some banana to get old to make some. Josh didn’t know and ate two of the four bananas so when he realize he made me banana bread with the remaining left two bananas and it turned out delicious still - but we both agreed that next time it needed more than two bananas hehhe

METHOD 1. Preheat the oven to 350°F (175°C), and butter a your own pan and spread mix of sugar and Cinnamon around the pan. 2. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas. 3. Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour. 4. Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean. 5. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve. (A bread knife helps to make slices that aren't crumbly.) I made my first Lasagna in this house with chicken and spinach.I honestly don't know why it took me so long to make one! Maybe because I am actively try to not eat heavy carb food or that I didn't have the right size of Pyrex so I finally remember to get one ha!
If you love Baklava as much as we do in our family you would know how expensive this treat is to buy all the time and how incredibly difficult and time consuming to make! My dad has found a way to make this delicious treat at home - the trick of course is using the pastry sheet instead of making it yourself. It can’t be any pastry sheet but it has to be Fillo Dough size 4! In our city he found it in a Syrian supermarket that carried middle eastern items. The following images are from one weekend he demonstrated the process with two different styles to us and I took all the pictures in the world to capture everything I could to try it later myself
The first style is the square shape, all you need is a rectangle baking pan or Pyrex some crushed walnuts (my mom has allergy to walnut so we use almonds) and crushed pistachios and melted unsalted butter. Brush some butter at the bottom of the pan and then oh the first layer of the dough then brush a layer of butter over and then lay over another layer of dough. Repeat for 5 layers then cover the later with crushed walnut or nuts if your choice and then cover up another 5 layer till you finish. Brush the top layer with melted butter and cut into squares and then bake till it’s golden. When it’s done pour over the sugar syrup (boil 2 cups of sugar in 1 cup of water + 2 teaspoon of rose water) and decorate with pistachios. The second style is the rolled out dough in two different shapes. He used a tiny round stick and rolled in the dough when down he made a circle and lay on the pan. For the second long roll style he rolled the edge of the dough and then stopped and. Added a line of crushed pistachios and rolled the dough over it and lay it on the pan, cut them and cover them all in melted butter. When they are baked and hot pour over the syrup and let it cool. This year Josh asked for a fruit pie for his birthday cake, so I bought him one and made him another. The one I made was almost pre-made, unfortunately because of my job I was not able to do more. I bought the pie crust and the filling and cut the fresh fruits and poured a pack of boiled jello over them and set it in the fridge to harden. The result was pretty legit visually, but it didn’t taste very good - it tuned very sweet. Hopefully next time I will be able to make one from scratch!
My parents have a fig tree in their house and every summer we have abundance of this wonderful fruit - this year my favorite way to eat it was in a salad, it has such a fruity taste that I found it's combination was best with some goat cheese, prosciutto, nuts and whatever else I could find in the fridge. For the dressing I usually use pomegranate or raspberry vinaigrette type of dressing or just olive oil.
This is one dish I never thought I could do at home, in the span of 20 minutes I made these roasted bone marrow chunks thanks to the air fryer with just some salt and pepper and oil and it was super delicious!
I made these Canelés for the first time following this recipe and I have to say except for having to wait 24 hours for the batter to get ready, everything else in the process was pretty straight forward. I changed some of the ingredients and instructions so this is for me so next time I am making it I have a reference.

Making madeleines actually turned out one the easiest pastries I have baked so far. I found this simple recipe on a website called Epicurious, but to be honest if I were to make it again I will look for a more elaborative recipe that includes nuts, coconut flake of some sort etc since with every bite it left me desiring for something to chew on or another layer of something else to go along with it. Also my batch almost burnt which for all I know I cannot blame the recipe for, rather our out of wack oven with uneven temperature which is still on the to-do-list, but for now here is the recipe that I tried making these madeleines. 2 Eggs
pinch of salt 1 cup of flour 2/3 cup sugar 1 teaspoon vanilla extract 1/2 teaspoon grated lemon peel 10 table spoon (1 1/4 stick) unsalted butter Preheat the over to 375 degree Fahrenheit. Butter the pans and set aside. Using electric mixer beat eggs with 2/3 cup of sugar to blend and then add the vanilla, lemon peel and salt. Then add the flour and gradually add the melted butter until it is all well blended. Then spoon the mixture inside the mold and bake for 16 minutes or until it is golden and puffed all the way around. |
